Albert's Potato Salad

Ingredients

3 medium new potatoes

½ teaspoon salt

2 tablespoons vinegar


cup white vinegar

1 tablespoon vegetable oil

¾ sweet onion, chopped coarsely


tablespoon sugar

cup water


teaspoon salt

¼ teaspoon pepper


1 tablespoon minced chives

Description

We had a cottage next door to Albert Hammerling and the treat of the summer was his schnitzel party for everyone at the lake. His potato salad was always the star. After living in Vienna for a half year, we realized that Albert had taught everyone in that country to make his salad! But even if it's not unique, it's a great salad!

Directions

Peel the potatoes and put them in a pan with ample water to cook them. Salt the water and add the vinegar, bring to a boil, and cook until they can be easily pierced with a sharp knife, about 20 minutes after coming to a boil.

Drain the potatoes and let them cool a bit. When they have, slice them about ¼" thick and put them back in the cooking pot. Sprinkle with some of the vinegar and mix them gently to distribute it. Now add the onions and oil and mix to cover the potatoes as much as possible. Add the rest of the vinegar and mix again.

Mix the sugar and water and, when the sugar has dissolved, add it to the potatoes and mix gently to blend. Season with salt and pepper to taste.

When serving, top with the chives.

Notes

The salad should be sloppy and a tad sweet. It's best to let it sit for a few hours to blend the flavours.
